Ever crave breakfast for dinner?

Last night, I was! I had an amazing Irish breakfast a while back at a restaurant downtown and it was dreamy. So dreamy that I was thinking of this very meal while stuck behind a desk and it was only noon. Thinking about all the ingredients I needed to re-enact that fabulous experience hoping I didn’t have to make the dreadful rush hour grocery store run!

Well hopefully at this point you’re super excited to get started on this awesome dinner/breakfast, what do they call that? dinfast? (gosh, I hope that’s not a swear word in another language…)

Here are the few simple things you’ll need: (for two)

  • 1 medium sweet potato, peeled and chopped
  • 1/2 green pepper, chopped
  • 1/4 medium yellow onion, chopped
  • 3 pieces bacon
  • 4 eggs
  • fresh shredded cheese
  • salt and pepper

In a skillet, cook the bacon. Remove from the pan and place on paper towel to pat off any access and unnecessary grease. Discard most of the bacon grease leaving some to saute the vegetables. Toss in your chopped potato, pepper, and onion and saute on medium heat for about 10 minutes, season with salt and pepper.

 

About 2 minutes until vegetables are done cooking, heat another pan and cook the eggs to your liking. I like to cook mine over easy so then the yolk acts as a sauce with the other ingredients. Divide the vegetables into two equal parts and add the egg on top, sprinkle each with some bacon and shredded cheese.
