Penne with Creamy Vodka Sauce

I wish I could blog smells and tastes cause pictures only say so much. This dish was an awesome meal to prepare after work because it took no time at all. I don’t usually use a whole recipe because it’s way too much food but here is the whole thing and you can cut it down as you choose.

A little piece of information that doesn’t have much of anything to do with this meal is something I discovered while grocery shopping. I had “PAM” spray on my list of things to get, as I was grabbing for the well-known brand I noticed that word, flour, that burns my brain a little. I had no idea PAM would contain flour, it never even crossed my mind. After I got home I did a little research on their website and discovered that it’s only their “baking” spray that contains flour, everything else is gluten-free.

Anyway, here’s this tasty recipe…

- 1/4 cup olive oil
- 4 cloves garlic, diced
- 1/2 t. red pepper flakes
- sea salt
- 28oz can tomato puree
- 1 pound dried penne (my favorite is tinkyada)
- 1 cup heavy cream (this seemed a bit much so I slimmed it down a bit)
- 2 T vodka
- 1/4 cup fresh parsley cut

Boil water for pasta and cook.
Place garlic, olive oil, red pepper flakes, and pinch of salt in a saucepan on medium heat. Cook until garlic is golden brown. Stir in tomato puree. Simmer for about 15 minutes and the sauce is thick.

Add cooked pasta and vodka into pan and stir. Add cream and stir. Cover pan and turn heat to low and let sit a few minutes before serving. Top with parsley.
