Honey Peanut Butter Bars

What’s better than a breakfast bar drizzled with chocolate to start your work day morning? During the weekend you can make those awesome yogurt pancakes but, generally, monday thru friday I can barely get up in time to put my shoes and walk out the door. I made these bars because I wanted something quick to grab as I flew out the door for work and these have done the job pretty well.

 

  • 6 cups honey nut chex
  • 1/2 cup honey-roasted peanuts
  • 1/2 cup honey
  • 1/4 cup sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup dark chocolate chips

Here’s what to do: Butter a 9 or 8″  square pan. In a large bowl mix the cereal and peanuts, set aside. In a saucepan, heat honey and sugar just to boil over medium heat stirring constantly. Remove it from the heat and stir in the peanut butter until smooth.

Pour over the cereal mixture, stir gently until evenly coated. Press firmly in pan and let cool for 15 minutes. In a small microwavable bowl add the chocolate chips and microwave 30-60 seconds, stir every 15 minutes until melted and smooth. Drizzle the chocolate over top of the bars and let stand at room temperature for at least 30 minutes. Store loosely covered at room temperature.
