Greek Salad with Homemade Yogurt Dressing

One of my favorite salads is by far a greek salad. I also love love love greek yogurt, gosh, I just need to go to Greece already! I decided to take a stab at making my own salad dressing and I’ve heard through word of mouth that greek yogurt dressing is tasty. These kinds of meals get me pumped for spring time when all the markets start opening up again and I can spend my Saturday morning searching for fresh fruits and vegetables from local farms. YUM!

All you’ll need to do for the dressing is whisk together the following ingredients sprinkling it with salt and pepper to your liking.

  • 1/2 cup plain greek yogurt
  • lemon juice from one lemon
  • 1/4 cup extra virgin olive oil
  • 1 small garlic clove, minced
  • salt and pepper

This is for more than one salad so don’t think I used all this for one meal, come on now!

For the salad I used a mix of arugula and spinach, half a tomato and red pepper, seedless cucumber, a couple olives, and topped it off with some goat cheese and homemade dressing. Would pair perfect with a slice of pita bread, if you are lucky enough to have it, or I went with a slice of multi-grain Udis!
