fresh avocado cups

One of my favorite vegetables!

Avocados are amazingly delicious, although can sometimes be hard to work with. Because of their delicate consistency and quickness to brown you pretty much have to eat them right away one they’ve been cut. I wanted to figure out a better way to eat them so I didn’t have to deal with the slimy frustration of peeling and cutting them without it looking like that brownie disaster.

This is perfection. (From the ideas in my head)

Ingredients

  • 2 avocados
  • 1 small tomato
  • 1/8 cup diced onions
  • 1/2 T. italian dressing

Simply slice the avocados in half by guiding a knife around the center pit and pull apart. Pop out the pit carefully with the end of a knife (away from your body, people). The pit makes a perfect cup in the center of both halves where you can put the remaining ingredients.

Dice up your tomatoes and onions into a small bowl. Add the italian dressing, a little salt and pepper and stir until mixed well. Divide the tomato ingredients evenly amongst each avocado placing it the natural scooped out center.

Eat it with a spoon. Perfect for a small snack or an app at a party :) summer, is that you?
