Breakfast Crepes with Nutella and Fruit

Good Morning!

Well, it was a good morning! I mean, how could it not be when you wake up to something like this? Pair it with one of these and your day just got 10 times better! These guys bring me back to Paris during the 5 week backpacking trip I did the summer of 2010. My backpacker-in-crime and I ate about 15 crepes during the 24 hours we spent in Paris, lets just say, thank god I wasn’t diagnosed with Celiacs until after that trip!!

Breakfast is by far my favorite meal of the day. I am one of those people that will have breakfast no matter what time of day it is. AND to make it an even better morning, it’s amazingly sunny outside so I FINALLY got some really good light for some delicious pictures! I decided it was time to take a new approach at my photos, cause I feel they are way too dark (which may be because most of my pictures are taken when I get home from work and the sun is already down). So I took it to the window, reflected some light off a flat surface and got this hotness!

Crepes are super easy and you can fill them with so many amazing ingredients. My family and I used to eat crepes all the time for dinner, I know!, and the dinner table would be filled with all kinds of choices. Anywhere from jelly and nutella to ham and cheese, the skies the limit with these french cakes. Now go ahead, have some for lunch!

What you’ll need:

  • 2 cups flour
  • 2 cups milk
  • 4 eggs
  • 1/4 t. salt
  • 1/2 cup butter, melted
  • toppings of your choice

Simply mix all the ingredients in a medium bowl or food processor. Heat a skillet with a little spray on medium until it’s nice and warm. Scoop about 1/2 cup of the mix into the skillet and spread it with a spatula until round and thin (you have to do this quickly as it will begin to cook fast). Let sit for about a minute or till golden on one side and then flip it like a pancake and cook the other side.

You can choose to add the ingredients on top while the second side is cooking (if you’re using cheese and want to melt it) or take it off the skillet and add your ingredients. For this scrumptious sweet crepe I used a thin layer of nutella, strawberry, blueberry and banana slice, and sprinkled with confectioner sugar.
