ginger snaps

I saw this recipe on pinterest (original source: fitsugar.com) the other day and had to replicate a gluten free version!

Here are your ingredients

• 1 3/4 cup gluten free flour
• 1 t. baking powder
• 1 1/4 t. baking soda
• 3 large bananas
• 1/2 cup brown sugar
• 1 t. vanilla extract
• 3 egg whites
• 1/2 T. olive oil
• 2 T. soy milk
• 1/2 cup greek yogurt
• 1/4 cup orange juice
• 1/4 cup plus 2 T. coconut flakes

Preheat oven to 350 degrees.

Mix together the flour, baking powder and baking soda in a small bowl. In a food processor, mix the bananas, brown sugar, and vanilla add egg whites and mix until smooth. Then add olive oil. Slowly add flour mixture and mix until combined. Then, add the yogurt and orange juice. Add milk if needed, for more fluffy consistency, but not necessary. Lastly, stir in 1/2 cup of the coconut flakes (I also added a sprinkle of cinnamon) and pour into a greased (I use coconut cooking spray) loaf pan. Sprinkle with remaining coconut on top and place in the oven for 50-6o minutes or until center is completely cooked.
